Brilliant straw colour with fine perlage. Ethereal bouquet with hints of lysate, followed by fruity tones of apple, peach and orange. Delicately dry and harmonious on the palate, with a fresh, full-bodied flavour and an aftertaste of toasted and panettone notes.
Bombino Bianco, Pinot Noir - 13% - D'ARAPRÌ
Deep straw colour with golden reflections, fine and continuous pérlage. The aromas are elegant with toasted bread notes and hints of pastry. On the palate it is dry, harmonious, elegant with a fresh, subtle creaminess.

Re Luigi is made exclusively from a selection of Nero di Troia grapes vinified in white and harvested strictly by hand, at the crack of dawn. The wine is golden in colour. The nose presents itself with toasted yeast and fruity aromas. In the mouth it is soft fresh and creamy, very mineral and balanced, very fine and persistent perlage.

Pale pink "onion veil" colour, fine-grained and persistent perlage. The bouquet is rich and intense with notes of rose petals. The taste is particularly soft and elegant enriched by a pleasant freshness. Perfect as an aperitif with tartare and raw seafood, also excellent with medium-aged cheeses.

Subtle, elegant bubbles, hypnotic in their long trail. Bright, brilliant salmon pink: a little sunshine has been trapped inside. The sense of smell is activated, curious and a little taken aback. Enraptured, it decrypts ginger, a salty note, hazelnut and more, more, but the mouth presses to give space to the taste, a little tired of all the time the nose has taken. Finally, it is its turn: "Thirsty, fluid, lively, a taut body," it says. "A non-intrusive, not very talkative travelling companion, the kind you get along with easily. Of those who know what they want without making a lot of fuss, but who finally open up and tell you what they didn't want to tell you at the beginning," thinks the mouth all happy with that full but taut taste, so lively and lusty now that intimacy has become closer and more enjoyable.

Italian sparkling wines
Soft, delicate pink colour with violet hues. A sensual wine, combining the fruity delicacy of GLERA with the spicy berry flavour of PINOT NOIR. On the nose there is a joyful bouquet of golden apple, peach and small berries with floral notes of spring flowers. The palate is exuberant, lively and fragrant, with a refreshing and well-balanced acidity, embraced by almost creamy bubbles.

Golden straw yellow colour with greenish reflections. Rich, fine and persistent perlage. The nose is fresh, fruity, floral with hints of orange blossom, citrus and peach. Straw-yellow colour with green highlights. Fine and continuous perlage. Ample and enveloping aromas range from ripe fruit to fresh flowers and notes of vanilla and pastry. In the mouth, it is savoury and complete, fresh and vibrant, decidedly coherent on the aromatic level.

White, exuberant mousse. Very fine, tight and persistent the grain of the perlage. The colour enchants us with the elegant nuances of soft pink and, further on, with the aristocratic tones of antique pink. We lose ourselves in its bouquet that opens with faint sensations of white peach and proceeds intensely and persuasively with pleasant fragrances of wild strawberries, citrus fruits, golden apple, rosehips and a hint of toasted bread.

Golden yellow in colour, the nose is round and ripe with aromas of dried fruit and a touch of honey. A full-bodied wine with lively hints. When the carbonic explosion subsides, the hints of dried fruit and honey found in the aroma appear completely.

Lively effervescence with a broad, powerful bubble flow. Pastel pink colour with slight salmon tones. The wine is clear. The nose shows aromas of jasmine flowers with hints of exotic fruit. The wine in the mouth is fresh and smooth with a touch of pink grapefruit.

An exceptional vintage, enhanced by the passage of time and the style of the winery. The foam is abundant and fed by a wonderful carpet of fine bubbles. The wine is clear with a delicate golden colour. The nose is round and ripe with aromas of dried fruit and a touch of honey, with hints of lemon. The taste is lively with acidulous notes. When the carbonic explosion subsides, notes of dried fruit and honey are perceived.

Made from 100% Chardonnay of different vintages, the colour is pale golden yellow with green highlights. It is bright and luminous with a lively and persistent effervescence. The first nose reveals great intensity, with notes of fresh fruit, particularly ripe citrus fruit. On the second nose, delicate notes of flowers and white fruits (white peach). The palate is soft, harmonious and very rounded. Its vinosity is without excess, supported by an intense freshness. Notes of peach, citrus fruits and a pleasant minerality emerge in the finish. The finish is very persistent and refreshing. A perfect Champagne for an aperitif, to be tried with tartare, raw fish and baked amberjack.
Chardonnay 100% 12,5% · RUINART
In 2010, the winter was harsh, the spring dry and late, the summer hot but not excessively so. After a sunny decade, this freshness was surprising. Then, two days of deluge stopped this ideal trajectory. With skill, the ripe grapes were picked and after 9 years of elaboration, the wine achieved its perfect balance. On the nose, the sweetness of tropical fruit, green mango, melon and pineapple shines through. Then more temperate notes emerge, the tingle of an orange peel, the mist of a tangerine. The wine breathes and its freshness is revealed. A tactile sensation of peony, jasmine and lilac. On the palate, the wine reveals its full, rich, intense character. On the palate, the matter takes on body and is reinforced with spicy and peppery notes. The energy lingers, leading to a magnificent saline finish.

A dry, still wine made from pure Malvasia Bianca del Salento grapes. The colour is golden yellow with fresh hints of broom and acacia. Fresh notes of white flowers and almond stand out on the palate, to be enhanced with fish dishes, white meats and soft cheeses.

It has a straw yellow colour with greenish highlights. The nose is dominated by notes of white fruit, apple and pineapple, well in harmony with citrus sensations of orange blossom and jasmine. The palate is fragrant, savoury, with a soft entry and balanced freshness.

The colour is straw yellow with golden hues, the aroma has an intense, fruity bouquet. The flavour is rich, harmonious and pleasant.
Minutolo · 12,5% · TERRE CARSICHE
Produced in upper Apulia on limestone-grained soils rich in minerals thanks to a microclimate that enjoys medium-high temperatures and low rainfall. Bright straw yellow colour with greenish reflections. Rich, intense and persistent bouquet, fruity with intense aromas of banana, passion fruit, apple, peach, combined with hints of pine and minerals. In the mouth it is fresh, elegant and with good sapidity.

Apulian whites in Barrique
Produced in Valle d'Itria at 450 metres above sea level, it is aged in French oak barriques inside caves for about 8 months and in bottles for about 3 months. The colour is an intense straw yellow with golden reflections conferred by the wood. The bouquet is intense, fruity and spicy. The taste is velvety, full-bodied.
Bianco d’Alessano, Chardonnay, Fiano· 13,5% · TERRE CARSICHE
The 2019 vintage was one of the coolest in recent years. The mild winter and abundant rainfall in the early months of 2019 ensured a good vegetative restart, in line with the previous year. The spring was cool, with temperatures below the seasonal average, especially in May, resulting in controlled vegetation growth and a phenological delay of the flowering phase of about two weeks compared to usual. The arrival of fine weather and the increase in temperatures in the first few days of June favoured a sudden growth of the shoots, ensuring a good leaf apparatus for the vines. The Pietrabianca harvest began in the first ten days of August with the Chardonnay, ending in the last days of September with the Fiano. Pietrabianca is an elegant Chardonnay with a small percentage of the indigenous Fiano, born at Tenuta Bocca di Lupo in the heart of the Murgia, and the origin of its name is inspired by this territory. "Pietrabianca" recalls, in fact, the rocks that farmers come across when preparing the soil and that, once ground, become an integral part of the soil and help enhance the aromas of the wines born there. The Pietrabianca 2019 has a brilliant yellow colour with greenish highlights. The nose is delicate, harmonious and marked by notes of white flowers and exotic fruit; in this vintage, the fresh balsamic sensations of sage and melissa, combined with those of lily blossom and toasted hints of hazelnut and vanilla, are enhanced. It has a pleasant persistence on the palate; the mineral and savoury notes delicately bond with the light buttery sensations. Its young expression already hints at excellent ageing potential.
Chardonnay, Fiano · 12,5% · TORMARESCA – MARCHESI ANTINORI
In 2015, thanks to a winter full of rain and snow, the vines were able to 'wake up' in a mild spring, with a good water reserve. The budding was earlier than in 2014, as was the flowering that began after mid-May, which was followed by an excellent fruit set. The summer was dry and very hot, with temperatures 3 - 5°C higher than the seasonal average. After mid-August, the situation changed again with providential rainfall and the consequent drop in temperatures, which re-established the ideal conditions for the continuation of the vine's vegetative cycle, bringing the turgidity of the grapes back to optimal conditions. The 2015 Pietrabianca presents itself with intriguing fruity and mineral scents, soft and enveloping. It has a fine structure and a rich personality. The nose releases Mediterranean and vaguely exotic scents, with notes of yellow fruit, citrus and flowers in evidence, enriched by toasted, honey and vanilla nuances. The sip is soft, warm, velvety and enveloping, supported by a balanced freshness and enriched by fruity and delicately spicy aromas that slowly unravel into a long persistence.

Straw yellow colour of medium intensity. The nose releases a fragrant bouquet with distinct citrus and mineral notes and hints of Mediterranean scrub. The palate is agile, fresh, savoury and well-structured.

Aromatic white wine, straw yellow with gold highlights. With bouquet of rose and lychee, clove, vanilla, sweet figs, grapefruit. Full, aromatic, with a pronounced and persistent aftertaste.
Gewurztraminer· 13,5% · ABBAZIA DI NOVACELLA
An aromatic wine, identifying the Valle Isarco. Straw yellow to greenish yellow in colour; combines floral notes, hints of peach and apricot. Fresh, savoury, with mineral notes.
Kerner · 13,5% · ABBAZIA DI NOVACELLA
A powerful and mineral Riesling. Straw yellow colour with greenish highlights. The nose is pleasantly citrusy, with hints of white flowers, jasmine and wisteria. On the palate it reveals definite aromas of cedar and lime and, with ageing, fruity aromas of white peach, supported by distinct minerality and freshness. Persistent and almost salty.
Riesling Renano · 12,5% · ABBAZIA DI NOVACELLA
The rather late grapes are harvested at the end of September and macerated overnight. Brilliant straw yellow colour with faint green reflections. Fruity, fine and elegant bouquet reminiscent of the floral essences of acacia and lemongrass. In the mouth it is fresh, citrusy and savoury, but at the same time delicate.

Brilliant straw yellow with golden hues, on the nose it expresses an intense, ample bouquet of great elegance and persistence, with hints of honey and wild flowers. On the palate it is soft, very harmonious, very long and full. A slight freshness and acidity accompany its development to a clean finish.

This famous Umbrian white wine is a blend of Chardonnay and Grechetto, then aged in barriques for 5 months. It has intense and exuberant aromas of citrus fruits, pears, white flowers and vanilla. The palate is soft and well-structured, with long, persuasive nuances of butter and toasted fruit.

Primitivo di Gioia del Colle, Aleatico · 12,5% · TERRE CARSICHE
Pink pomegranate colour, bright and shiny: it seems auspicious, with the symbolism evoking the fruit, prosperity, good fortune, a pathway to the promised land. The olfactory profile is clean, precise, punctual. "Oh, the rose with its lovely fleshy petals," comments the nose already sunk into the glass, "a nuance of rosemary and a rosary of small red fruits as a corollary." "The music here is deeper," retorts the mouth, "it is harmonious while touching thick strings. Pulp, structure and a tonic, fresh finish with a vibrant citrus trail".

A light pink wine, with shades between lychee and peach or pearl pink. Citrus and floral notes stand out on the nose, accompanied by vegetal notes reminiscent of sage. Good acidity and savouriness are perceived on the palate, combined with an enviable youthful freshness on the finish. The citrus notes persist in the aftertaste, particularly the lemon.

Ruby red colour with violet hues. Vinous odour, dry and delicate flavour with a bitter aftertaste.
Negroamaro · 14% · INCANTALUPI
The red is dense, barely penetrable by light. It almost seems as if it does not want to be discovered by playing hide and seek. But the sense of smell is ready to probe, curious." It is indeed deep, the first notes that come out are of plum, cinnamon, then come notes of cedar, blackcurrant leaf, hazelnut and a smoky touch in the distance. It goes beyond me this wine". Yes, I know, without me," murmurs the mouth, "you can't go any further! Here is a nice dark, savoury, well-woven pulp. The plot flows smoothly despite not lacking in material stitching, in the more intense chapters, but in the end it closes with a sip of pleasant reading".

Grape cultivated at an altitude of 350 metres above sea level and matured in French oak barrels for about 3 months. The colour is intense ruby red. The nose has an intense, full and fragrant bouquet. The taste is harmonious and full-bodied.

A strong vine that passes on the freshness and aromas of the Apulian hills. Colour: intense red with garnet reflections. Intense, warm, intensely spicy bouquet. Full-bodied, velvety, savoury and spicy flavour.
Nero di Troia · 13,5% · TERRE CARSICHE
Ruby red colour with purple highlights; spicy bouquet with notes of coffee, chocolate and vanilla; hints of berries, especially blueberry and blackcurrant. The palate is soft and intense, with a delicate tannic texture and a long finish.
Primitivo di Manduria · 14,5% · LA PRUINA
Produced in the: Valle del Sessantanni, between San Marzano and Sava (TA), characterised by a rather hot environment, with very low annual rainfall and very high temperature excursions. The soil has a characteristic red hue that derives from an intense presence of iron oxides. The colour is a very deep ruby red; the bouquet is ample and complex, fruity with notes of plums, cherry jam to which a light spiciness and hints of tobacco are added. A full-bodied wine, soft and rich in noble tannins, with a finish that offers notes of cocoa, coffee and vanilla.

Italian reds
Comes from younger vines. It has a more or less intense ruby red colour and turns to garnet with ageing. Aroma of wild berries typical of the variety. Taste dry, full, lively with tannins when young, rounding off to an exceptional harmony with age.
Aglianico del Vulture · 13,5% · DONATO D’ANGELO
Obtained using the ripasso technique, traditional in Valpolicella, which is carried out in the spring following the harvest, putting the wine in contact with the marc, still loaded with sugars and aromas, of the dried grapes used for the production of Amarone and acquiring structure and complexity. It has a brilliant ruby red colour. The nose releases fruity aromas of cherry, blackberry, blueberry and plum with hints of pepper and cinnamon. On the palate it is dry and well-structured, with vigorous tannins, hints of red fruit and hints of black cherry jam, with spicy hints of cinnamon, clove and pepper.

Ruby red colour. Spicy nose with hints of fresh wild herbs, rose and volcanic ash. Juicy, balanced and elegant on the palate, with a savoury finish.
Nerello Mascalese, Nerello Cappuccio · 14% · PALMENTO COSTANZ
A red wine, purple to ruby red in colour with slight brick red highlights. Intense and typical: when young it has a fine aroma of strawberries, raspberries, plums, or cherries and undergrowth; with ageing it takes on nuances in which oriental spices, hints of chocolate and truffle stand out. Dry, full, pleasantly tannic, with many variations; harmonious and velvety.
Pinot Noir · 13% · ABBAZIA DI NOVACELLA
Obtained using the age-old technique of appassimento, it has an intense garnet red colour. The Amarone expresses typical fruity aromas of cherry, black cherry, jam of small berries, to which are added elegant hints of sweet spices and dark chocolate. On the palate it is a wine of great structure, warm, soft and velvety. It reveals a compelling fruity fullness, crossed by elegant spicy sensations.
Corvina, Rondinella, Corvinone · 15% · VILLABELLA
Intense ruby red colour with garnet reflections. Complex bouquet, with hints of plums, ripe cherries and small red fruits that are well integrated with notes of liquorice and tobacco Intense flavour, with tannins present but soft and sweet in texture. Great aromatic persistence.
Sangiovese · 13,5% · ROCCA DELLE MACIE
Historical wine of the Antinori house. Ruby red on the nose intense notes of marasca cherry, violet and lavender alternate with small haematic sensations, typical of Sangiovese, and spicy hints of tobacco and leather. The palate is enveloping, full, with an excellent compactness of the tannic texture and a good liveliness that make it long and persistent. Excellent aftertaste characterised by red fruits and liquorice.

Dark Bordeaux. Aromas of blackberry, plum, dusty earth tar, cedar and cinnamon. Full-bodied, with strong flavours of blackcurrant, cherry plum. Aged for 18 months in natural wood and matured for a further 12 months in bottle.
Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot · 14% · COLLAZZI
Deep ruby. It presents very broad aromatic spectrum aromas in which delicious notes of vanilla, small red fruits, layers of jam and early sweet spices blend together. On the palate it appears completely aristocratic roundness and softness, typical of Merlot, very elegant in its flavours, particularly enjoyable and persistent in taste.

In a way, it is the "alter ego" of Cervaro: together they represent the two different expressions of the complex and refined soul of Tenuta Castello della Sala.
It has a brilliant garnet red colour.
The nose recalls delicate sensations of spices, violets and small red fruits. The palate is typical, soft and savoury, with silky, characteristic tannins that amplify its pleasantness.

Its aroma is characterised by mineral, balsamic and hints of ripe black and red fruits.
